It's a Monday after a Holiday Syndrom! I nuked 2 cups of cooked rice then went out in the Beemerpad to butch bitch sharpening the blades on the JD425 deck before installing it back on the mower. I took the tirechains off along with the weights but not the snowblower attachment yet. Ruby laid down to scope out the situation as it transpired while ever ready Ronnie was overly fascinated by the sparks the grinder gave off while I sharpened the blades. I pulled out a lawn chair mid-blade to kinda settle Ronnie into the facts of shop work when the unthinkable happened.... I fell sound asleep until JD came in and nudged me asking about dinner! I'd gotten a new recipe I wanted to try out---Taco Chicken & Rice Casserole. Prior to nodding off like a twit I made the 2 cups of cooked rice. Which is pretty simple... put 1 cup of rice in 2 1/3 cups water in a nukeable mixing bowl then zap it on high for 6 minutes and wait about 20 minutes for it to fully absorb the water... Lucky for me I do try to plan ahead. Be ready to wear out your can opener for this one! to your cooked rice 2/3 5 oz cans of chicken breast 1 can whole kernel corn- drained 1 14.5 oz can diced tomatoes 1 15oz can pinto beans - drained 1 packet taco seasoning Stir the top ingredients together an place in a large covered baking dish or a 9 X 13 and cover with aluminum foil. You may want to 2 cups of shredded cheese to top it off I used a Colby/jack cheese for ours Preheat oven to 350 degrees and bake for 35-45 minutes JD decided he wanted his in a tortilla with picante sauce which I thought was a good idea too after I tasted it. Give this a try and let me know what think of it. Ruby gives it Both Paws ! |

That's 2 or 3 cans of chicken depending on your tastes.

Next time I make this I am giving it a little more kick with some dried crushed hot peppers.

See how the weather goes for tomorrow... I never know if planting is a GO! or a no go from one day to the next..... sigh

I can smell it here !! OMG, I would scough up a plate of that with the help of some nacho strips !! Bret, I am going to substitute the pinto beans with spicy Ranch style Beans !! I can't wait !!

Should not be watery IF you drain all the stuff according to the recipe. This was my first try at it.

I put on top probably about 1 1/2 - 2 cups of shredded Colby/Jack cheese. This was an experimental recipe designed as a test run to take out for the planting crew. I didn't know if it would be any good or not.

Ruby's taco chicken and rice casserole sounds delicious and the recipe can easily be modified to suit personal taste preferences. I make similar dishes myself when I have forgotten to defrost some meat.
